Doctoring White Cake Mix With Pudding

Do you use an additional egg white or a whole egg when adding a pudding mix to a white cake mix.

I wondered ig an egg white might make it dry and if a whole egg would affect the color any.

I always make my white cakes with whole eggs. It affects the color only slightly, about the same color difference as between a plain white mix and the french vanilla mix.

However, I do not add an egg or an egg white when making the mix and adding pudding to it. Just make the cake like you normally would and add in one regular size box of pudding mix, not the bigger one!

I've done it either way with the whole egg or just the whites. I usually end up using the whole egg since I forget to use just the whites. Shouldn't affect the color too much.

What flavor pudding are you using? White Chocolate won't affect the color, but if you use vanilla pudding it will.

I only use whole eggs in white cake and do not find that once it is baked you can tell a lot. If you are going for a whiter look...I would use white chocolate pudding instead of vanilla. Also...by adding the extra egg it will not dry out your cake. icon_smile.gif
