Would You Fill A Carrot Cake?

My hubby wants carrot cake for his bday on 12/24. Would you add filling between the layers? I saw one at costco that had apricot filling. I've never made a filling before. Help! Thanks,

Personally, I would just put thin layers of cream cheese icing (I prefer it to be not that sweet) between the layers. If you want to make some other type of filling I would sugest searching the recipes on this site, but maybe someone else can give you a better idea. Good luck! I'm sure it will turn out great no matter what!

I'm w/ waterfallsoygurl having done it before.

One thing I tried once and liked was adding some almond slivers to the cream cheese icing filling.

I use the crusting cream cheese recipe from here. It is very good. As long as everything is at room temp when you start it crusts great. I add some toasted, chopped pecans to the cream cheese icing to make a filling and then I torte both layers and put a thin layer of the filling on each. Yummy! I also use the carrot cake recipe from Cake Mix Doctor that is great!

To toast the pecans-oven 325 for 10 mins!!

For some reason I can't see carrot cake tasting too good with a fruit filling...but maybe that is just me. I think you might be better off just using the cream cheese frosting as your filling. You really can't go wrong there! icon_smile.gif

Hmmmm...maybe a cinnamon butter filling to complement the spices in the carrot cake and then covered in cream cheese icing.

I love carrot cake..... icon_smile.gif

how about a cheese cake batter. the no bake type. Wouldn't be as sweet as BC, and then ice it with the cream cheese icing from this site. I've always wondered about that combo....someday I'll get around to trying it. icon_smile.gif
