My "cool-whip like" lesson....

Well, some of you may remember my post about a week or so ago about a lady wanting an icing like cool whip. I searched, posted, reviewed, etc. SEVERAL different recipes, from IMBC, to stabilized whipping cream, dream whip, to different types of regular BC. I stressed out about this WAY too much!!!! I talked it over with her and we decided on the dream whip based icing (from the recipe section). I've made this before and it isn't too sweet at all and I had no problems with it before. WELLLLLLL, let's just say that this icing is not meant for detailed work or stacked cakes, IMO. I could not get the icing smooth, it kept moving around, all kinds of stuff!! I stuck the thing in the fridge for HOURS and it still would not even harden the slightest bit for me to work with.
This woman wanted a Disney princess cake similar to another one that I did. I thought it was going to be easy considering I had made this design before (she wanted only a grapevine & drop flowers). This cake took me 10x longer than it should have and then STILL didn't come out that good!! I was so disappointed. BUT lesson learned------do what you know, if you don't know it, then make sure it's going to work before you do it! And most of all, have faith in those gut feelings!!!
I now have a new rule---if someone wants a stacked cake----it's on MY grounds! icon_mad.gif and no fluffy light icing for it either!!!!

I did want to thank everyone for all their posts and suggestions!!! Especially SquirrellyCakes and others who TOLD ME SO, but I didn't listen icon_redface.gif Live, decorate, learn, right????

Cute cake! Sorry to hear about your troubles. Which recipe did you use??

I use a dream whip based recipe all the time and love it. It crusts a little bit, I use the paper towel trick and I can make shells etc.... I am pretty sure I could do roses although I don't I have ever tried.

I think it's called Creamy Dreamy in the recipes section. I used it before and I seem to remember it crusting just slightly enough to smooth. I would have never used it had I know it would have turned out that way. The grapevines and flowers cover alot of the problems. It took me forever!!!! I'm just mad about the top sections and places like that. Alot of times frustration with a cake comes in how much time and effort it took!!!

Sometimes the cakes that we do all the time, end up one time or another giving us problems.

I use my dream whip recipe for everything..frosting, borders, writing, roses, other BC flowers....everything!! it's the only recipe i make...

can i ask which one u used??

Cake Fairy~~ Do you mind sharing your recipe? I have been looking for a recipe that this for a long time and have not found one the I could use to decorate with.

Now, has she ever seen a grocery store whipped cream frosting cake with any detailed design? No! She was asking for you to hand her the world on a platter. You did an amazing job working with the whipped frosting.

I tried the firmer version of the dream whip frosting and it had a serious grit issue. crunch, crunch, crunch.

Don't get me wrong it was a good icing, I just had major problems with it to get it nice and smooth and hold up for these decorations and to be stacked. Who knows, maybe it's just me! I wouldn't be surprised!!!

And like I said, I will NEVER do it again---but she was happy. Geez icon_rolleyes.gif
