I have a few clients wanting to taste test some cake for their wedding cakes, but I just work out of my house right now, and I don't have a lot of orders yet... so I have no need to make a huge amount of cake just to have a few tasters. How long can you keep cupcakes in the freezer? I can probably have all the flavours they want to try in the next 4 weeks, because I have some cakes to do between now and then, but will they be okay in the freezer for that long?? Is there a way to cut the recipes so that I only make like 6 cupcakes of one flavour?? Any help would be greatly appreciated!!
Thank you!

I have frozen cupcakes before, and I think you would be okay for 4 weeks, but I wouldn't do it much longer than that. I froze mine in ziploc bags and then wrapped that in foil. To thaw, just put the package out on the counter till it comes to room temp and then unwrap and ice.

I freeze cupcakes all the time. My daughter has a dairy allergy, so when I make her cupcakes, I make a whole batch and then freeze them. I have kept frozen cupcakes for a month or more with no problem.

I bake them, place them on a cookie sheet and put the cookie sheet in the freezer until all the cupcakes are frozen. Then I put a bunch of them into a ziplock bag once they are frozen. If I put them straight into ziplocks without freezing first, sometimes they stick together. The other way is fool proof.

Good luck with your orders!
