Hi,

I've just started decorating cookies and I don't know why but the icing I make doesn't dry out shiny. What's the secret???? What's the best icing recipe to decorate cookies? Thanks!

I had the same problem and I've been told to use corn syrup instead of water in the recipe.

Wilton's Royal Icing recipe is the one I have used.

3 Tablespoons Meringue Powder
4 Cups sifted confectioner's sugar
6 Tablespoons corn syrup

Beat all ingredients at low speed for 7-10 mins. (10-12 mins. at high speed for portable mixer) until icing forms peaks. Yield: 3 cups

*When using large countertop mixer or for stiffer icing, use 1 Tablespoon less corn syrup.

I haven't used this with the corn syrup yet, so I don't know just how shiny it comes out.

Happy baking!

Check out the "cookie" topic, there are numerous threads about icing.

The wilton cookie icing does dry shiny. You can look in my pictures and see examples if you'd like. It's the only method that I decorate cookies with.
