Hey guys,

I have two caramel cake orders for Christmas. I tried the frosting out of Cake Doctor and I really didn't like it. It was great for frosting a cake.

Does anyone have a good carmel frosting they have used and a different idea on a caramel cake?

Thanks in advance
Tilisha

DH brand makes a carmel cake mix that I think is very tasty. I reminds me some of spice cake, so cream cheese icing would be good. I used BC and it was fine, I guess, I got good feedback on the cake.

For caramel cake, I just mke a yellow cake and add a tub of store-bought frosting (caramel pecan flavored) right into the mix. It tastes great and is supermoist!

I have a recipe for caramel cake icing that my Mom used to make for my birthday when I was little. I use it now and get rave reviews. I sell them every year to raise money for Relay for Life--and I never have trouble making my quota!

1 lb brown sugar
2 cups white granulated sugar
1 cup plus 2 tbs of evaporated milk
2 sticks of butter or margarine
1 tsp vanilla

Bring first four ingredients to a boil in a medium sauce pan. Boil for 3 and a half minutes or four minutes--until icing feels stick to stir and coats the spoon. Remove from heat and stir in vanilla. Allow to rest for 5 to 10 minutes. Then beat with a mixer until cooled and spreading consistency.
I put this on four yellow cake layers.

*If icing is too thick or sets too hard, add additional evaporated milk one teaspoon at a time.

*If icing is too runny after being cooled and mixed, add confectioners' sugar one teaspoon at a time.

This is delicious. Let me know if you attempt it.
