My DH picked one up cheap (free, actually) when he bought a new monitor for his computer. I can't find anywhere that the IP1600 will work for edible images.

Can anyone help?

It won't work with the edible ink cartridges that are currently available but hold onto it. The makers of the cartridges (like www.kopykake.com) are redesigning their cartridges to fit newer model Canon printers and they may end up fitting the 1600. We won't really know until the new cartridges are intro'd though.
