I covered a cake last night and let it sit out...will it be ok today still???

I think this would depend on how hot it was last night.
: )
Ganache is really safe to refrigerate, i always refrigerate my ganache cakes.
Im sure you'll get other opinions that i'd also like to hear : )

Yes, it's fine. You can leave it out for about 2-3 days.
