So the holidays are here & I need room in my freezer. I have 4 boxes of GS Thin mints that have been there for a while. Needing the room...I got a wild hair & thought I might be able to use them in a cake or something. Any ideas? My family is tired of me pulling them out to just be eaten so I need to find something that I can get rid of them & they won't figure it out! lol

Has anyone ever used them for cakes or cheesecakes? I thought maybe a peppermint cake or cheesecake (not sure how that would taste icon_wink.gif ). Anyone ever done this? I have got to make room for all my baking I am starting next week for Christmas.

That's not silly....I thought you were coming on here to admit that you just went ahead and ate the 4 boxes! That would make room too! icon_biggrin.gif
I think they sound great in a cheesecake. There's really no "filling" in them so they would crumble nicely!

You can just send them to me and I'll find a suitable use for them. Mmmm, thin mints!!! I didn't get any GS cookies this year.

They would be great as a crust for peppermint cheesecake. I just made a great no-bake one this weekend. You could also garnish the cheesecake with the crumbs.

I had an oreo cake recipe once. I'm pretty sure it was just a doctored cake using with pudding and egg and crushed oreos in it. I wouldn't see why you couldn't use those for something like that.

Or you could crush them up and mix them with buttercream or whipcream and use as a filling.

They would make a great crunchy filling layer in an ice cream cake or on ice cream period!

I just melt them now and poured them over brownies and then let it harden again - YUMMYYYYY!!!

You could make candy like treat with them, crush the cookies up, mix them into softened cream cheese, form little balls, put in fridge to firm up, meanwhile melt down white chocolate chips, and then dip the formed balls into the melted white chocolate and then allow the dipped balls to set up...I have had these with oreo cookies once or twice and they are to die for!

Thank you guys so much! Yep I am so hungry now! lol
Mamafrog - I have eaten so many. I am ashamed to admit exactly how many! lol I never have had them left until Christmas GS cookies go on sale again in January so I need to eat these before I buy more. lol

jdelectables - do you have a recipe for your peppermint cheescake? I would love to try it!

I'm thinking if you're making cheesecake use chocolate wafers to make the crust and then sprinkle the crushed thin mints on top of the chocolate crust then add the cheesecake filling.

I crushed up some chocolate mint cookies then mixed them with buttercream to make a filling and everyone loved it. Now that you have so many yummy ideas you are going to need more mints!
