Newbie...mud Cake Help!!!

Hello Im new to the cake making thing, Im am unclear on the timelines of things.
Could someone please let me know a rough timeline, I am making mud cake. The recipe says its fine to freeze for up to 2 months.
But then I am unclear on once I start putting it all together. How long does it last once the sugar paste is on? I will be putting ganache stuff between layers and on the outside, it is a big cake.

Also with the sugar paste flowers, can you make them in advance? How long do they last?

If you could please let me know I would be grateful.

Sugar paste flowers can be made up well in advance and stored in an air-tight container thumbs_up.gif

If I need my cakes for a Saturday I cover on the Tuesday and start decorating on the Wednesday. I try to have all my flowers etc. made well before I decorate.

Just make sure your fondant is sealing your cake so no air gets to cake. If you run a damp paintbrush (I use watered down vanilla essence) around your cake board when cover your fondant will seal to the board, also by adding a Royal icing border to board/cake edge this aids as a seal.

Everyone loves my mud cakes as they are really dense and moist.

So its ok to make the sugar flowers a few months before, and then store them in an airtight container in the cupboard, is that correct?

And once I have covered the cake, before decorating, is there certain ways to store it? Leave it on the bench, in the fridge or in cupboard? Does it need to go in a box?

As I'm pretty new to cake decorating. I like to start practicing my flowers a few weeks before I need them. If they work out well I store them. I also make heaps more than I need just in case of breakage. With what ever is left over I store, these are great for a last minute cake, just colour and throw them on!!.

Another good idea - After covering a cake in fonadant, use the cut off/ excess fondant to make the formers for your roses etc. Just mix some tylose into the fondant and make up heaps of different sizes. Then you will always have them on hand ready to use. The day after I have finished a cake I just sit down with a cuppa and make a pile of these.

As for the covered cake, after I have covered in fondant I leave it on my bench covered in a mosquito/insect net.
