I Have Too Many Baking Choices!

I don't know if I am the only one, but sometimes I want to bake so many things that I get confused on which ones to even do!!!!

For example: I want to bake all these things to have for visitors.

Petit Fours
Yule log cake
Cupcakes
Cookies
Egg Nog (Spanish one made from scratch)
Tres Leches cake

Yikes!!!! I need to narrow it down to a couple!!!!

My biggest problem is that after I have many ideas I leave it to the last minute then I get so stressed out!! I completely understand you!!

I truly hope that none of my holiday guests read this board, because if they see this list you've created they will be sorely disappointed when they turn up on my doorstep!

I will definately go for the tres leches cake!!!! yum!!!!

I still don't know what I'm going to bake for Christmas so, I completely understand you!

I wonder if the tres leches cakes can be covered in fondant?? will it be too heavy on it?

Thats how i am...just break it down...one day make one thing and bring it over to someone and let them enjoy it and give u feedback, then for your next visit, make something else...

Is Spanish egg nog different from American eggnog? Do you use milk, eggs, nutmeg and lots of rum? icon_smile.gif I say ditch the cupcakes since you want to make the petit fours. I haven't had a good yule log in years. Yummmm.

Fondant and tres leches cake would not be a good combo. Tres leches is a mildly flavored cake that provides wonderful balance to a spicy dinner.

I got carried away at Thanksgiving and made a tres leches cake, chocolate chip cheesecake, chocolate cake and yeast rolls. I let Sara Lee make the pecan pie as I don't even like pecan pie.

I would think so. Tres Leches is very rich and it only needs like a meringue type frosting or whipped cream or even just sprinkled with powdered sugar....

I agree the tres leches...it goes nicely with whipped cream, IMBC, SMBC or even 7 minute frosting.....yum!!

Well actually, just recently someone told that we have one that is similar but may not be exactly the same. I don't have a recipe for American Egg Nog so I don't know how they compare.

But anyway, our version of Egg Nog is made with coconut milk, evaporated milk, water, egg yolks, vanilla and rum. You can leave the rum out if you want. I think I got all the ingredients.

And yes, I will ditch the cupcakes and make the petite fours. You can arrange them nicely and I think are easier to eat since they are bite size.

I have made a couple of Yule Logs, or Buche de Noel or as we call them in Puerto Rico Brazo de Gitano (Gipsy's Arm). I have no idea why they call it that. Our yule logs are filled with jelly or guava paste.

I usually cover mine with meringue and torch it (kinda like a baked Alaska). I guess fondant is too heavy but I got some more ideas now!!!

Coconut milk...sounds like a good addition. My mom is the official egg nog maker. I'll have to ask what she put's in hers other than a liberal amount of rum. icon_smile.gif

I checked a couple of recipes online to make sure the yule logs of my childhood were the standard recipe. Yes, the American version is a VERY sweet cake roll with lots of whipped buttercream filling. It's no wonder that my mom bought it as a kid's treat.
