We've finished my practice wedding cake. I learned a lot from it. Had some trouble with the ruffle. It did fine on the 16" cake, which was on a 17" plate. It had somewhere to rest. On the 10" cake (on 10" plate), it kept wanting to fall off. I have never done a ruffle before, so maybe I am doing something wrong. I really want the ruffle on the cake, but may settle for a different border. Also, we tried the crusting buttercream and a couple of the fillings. Loved the Crusting buttercream. So much better than what I was taught in Wilton class. I still have not tried the pansies yet. Will do that tomorrow. I also have never done a swag and the cake calls for royal icing swags. I bought a cake divider set and will attempt that later. If anyone has any instructions or advise, I am not too proud to ask for it!!
