Ok,

We've finished my practice wedding cake. I learned a lot from it. Had some trouble with the ruffle. It did fine on the 16" cake, which was on a 17" plate. It had somewhere to rest. On the 10" cake (on 10" plate), it kept wanting to fall off. I have never done a ruffle before, so maybe I am doing something wrong. I really want the ruffle on the cake, but may settle for a different border. Also, we tried the crusting buttercream and a couple of the fillings. Loved the Crusting buttercream. So much better than what I was taught in Wilton class. I still have not tried the pansies yet. Will do that tomorrow. I also have never done a swag and the cake calls for royal icing swags. I bought a cake divider set and will attempt that later. If anyone has any instructions or advise, I am not too proud to ask for it!!

I just reread my last post on this topic, boy was I tired, it had nothing to do with it sorry! So let me post right, now.
Glad to hear you learned something from it. I too have problems with ruffles, or any side decoration, which is why mine are always so plain I just cant get myself to do things right. I know all I have to do is practice just have to find the time to do so!
Did you post a picture of the practice cake? I think if you did it would be easier for people to help...

I really do not know anything about wedding cakes, but from what I have read, I believe the cakes are supposed to be on plates that are 2" larger than the cake. So, a 10" cake should be on a 12" plate etc. I may be wrong, so wait for one of the pros to weigh in on this.

You are absolutely right Cookieman...a 10" can go on a 10" cake board but then you put the 10" cake board on a 12" separator plate...which leaves enough room for the border!

I don't have a digital camera. Also had a small problem with the plates and pillars. I was so tired by the time I got to assemble everything I put the 13" pillar on the 10" plate and it got stuck. Broke the plate trying to get it off. Now will have to replace that.

I am doing a cake out of the Wilton Wedding Dream cakes (Blossoms of Love) and it listed 10" plates for the 10" cake. I think you guys are right. I am going to use 12" plates.

The cake also calls for white leaves and all I can find are silver and gold. I don't think they are on the Wilton site either. I have decided to try the luster dust on the petunias. They are white, but will dust some gold on the inside.

Beecharmer,

You did good! Just keep practicing the different designs you want & you'll get it. I don't always bake a cake to practice on, I turn over a pan & practice right on the pan. That saves time! When your done just put your icing back in a bowl, cover it & put it in the frig for the next time you want to practice. This way you don't have to keep making icing everytime you practice & no cake! I do this all the time. My son even practices too. He doesn't decorate he just likes to bug me! LOL!!

I think I will get a dummy cake to practice on. I've read about them on this forum. But I wanted to make the whole thing since I have never baked a cake that big or done one with tiers. It was a good learning experience. I took the 16" cake to the homeless shelter. Took the 10" cake to my mom's for Easter and gave the 6" cake to a friend. Everyone in my family is sick and tired of cake. I was too tired to make a different dessert though.

My family is tired of cake too! A little more tired of the icing.

When I did my practice wedding cake I learned so so much!! I am so glad that I did it! I now know what part I need to be more careful on, what part I need to practice more on etc. It really was a learning experience! Glad it all worked out for you beecharmer~
