How do you put your royal icing lettering on your cake without sticking your fingers in the icing when you set them down??

Very carefully! You could try sliding them off of a little spatula or something. I have done several cakes with RI letters, and I really havent gotten my fingers in the icing.

I put a little of the cake's icing on the back of each letter with tip #1 to "glue" it to the cake. Or, I have been known to use the "drop and pray it lands where I want it to" technique icon_lol.gif
