Black Icing

I just got a tip and wanted to know if you guys have ever done this when mixing black icing. Using your usual buttercream icing and adding just a touch of coco powder and then using the black gel. If you have used this idea, does it work without changing the total flavor of the icing?

Yep. It's much easier getting it from brown to black than from white to black. I actually use a chocolate buttercream and go from there. Are you trying to keep the flavour of the white buttercream while making it black?

I hope it is not too late to reply to your response. My little girl was sick and I had to pick her up and take her to the doctor. It is not that I do not want to have the chocolate flavor, it is more so that when I try a chocolate buttercream it ends up with a "bitter" taste. The recipe that I have used is the Wilton chocolate buttercream. Also, adding the coco seems to change the texture of the icing.

I use the recipe for chocolate icing off of the back of the Hersheys Coco powder container. I find it tastes rather good and if you add the black gel coloring to it you can get black icing. I know its not a butter cream recipe. I havent had it taste bitter or be grainy; I havent ventured to try a chocolate butter cream frosting. I generally refrigerate any cake that is prepared more than a day in advance.

if you use the ameri color Gels that black is black with just a few drops this is the best black I have found.. That you dont have to use the whole jar like with the Wilton stuff... but yes you can put coco powder in your icing first and start with that as your base to get your black..

I too just found the Americolors and wow what a difference. Only a few drops and it works great. thumbs_up.gif

I am trying to replace all of my WILTON yuck jars with the Americolors... I have a handful but still have a lot to go .. I think if I order a few ever time I get an order I will be ok... they are a bit pricey but you use so much less... and most of the time you only need one drop for any color... they are a true color...

Thanks!!! But...... where do I find Ameri Gels. We do not have a Michaels or anything of that nature, however I am going to Roanoke this weekend and could stop in there.

Your not able to get them at Michaels you have to get them from a cake supplie store that carries them or you have to get them from on line cake supplie stores... if you go to www.google.com and type in Americolors you will get some sites that sell them.. They are worth the bit extra you pay for them cause you dont use as much...

I just called our local party shop that carries a variety of cake decorating stuff. The do not carry the AmeriColors but they do carry the Country Kitchen (I think that is what she said) and it does come in a super black. Have you ever tried this brand?

I have never tryed them so I dont know if they work as well maybe someone on here that has used them will be able to tell you ...

But like I said you can get them online if you do any online orders??

Thanks, I did find them online and I think I will try them both. I really don't like working with black icing, mostly because I have not had great success achieving the color that I want or need. I will let you know how the Country Kitchen colors work out. Maybe something you would like to try. I am assuming that they are not just a local product. icon_confused.gif
