Almond Paste Cookie Recipe For Cutout Cookies

I found an article from an older magazine that has a recipe for a sugar cookie using almond paste. They call it The Most Wonderful Cutouts in the World! It sounds yummy! Anyone ever have success using almond paste in a cutout recipe? I bet the almond paste gives it a good flavor. I think I'll give it a try for cookie platter cutouts..not sure how sturdy they will be.
4 large egg yolks
1/2 cup (4 oz) of almond paste broken into pieces
2 cups butter (4 sticks) softened and no subsitutions(cut up)
1 & 3/4 cup sugar
1/2 tsp. salt
3 & 3/4 cup flour
Beat egg yolks & almond paste at medium speed for 2 minutes or until crumbly. Add butter, sugar and salt and beat 3 minutes until creamy. Reduce speed to low and add flour gradually and beat until just blended.
Divide dough into 4 equal pieces , flatten, wrap and chill 2 hours. Roll out on lightly floured surface 1/4 inch thick and cut out cookies. Bake at 375 for 10-12 minutes. Decorate with ornamental frosting
Most grocery stores carry it in the baking supply area. It's usually way up on the top shelf! (Where I can't reach! )
I have done christmas cookies with almond paste .
Absolutely delicious!
Buy almond paste that comes in a can rather than the one in logs.
If you love almond definetely try almond paste ...even in cakes and buttercreams.
