Help! Cakes Keep Sinking In The Middle!
Decorating By Sunshine93 Updated 17 Feb 2007 , 3:41am by tcturtleshell
I have never had this problem before..but I've made two 11X15 cakes today..and they both sunk in the middle! Ugh..it's so frustrating! What am I doing wrong? Any help/suggestions would be appreciated! Thanks!
If you're sure that they're cooked in the middle, overbeating the batter could cause this. Also, opening the oven door often might cause them to sink.
Are you using a heating or or 1 or 2 flower nails? I've heard this helps a lot. i still need to try it myself.
The flower nail trick works like a charm. I just made a 12 X 18 and used 4 flower nails just to be safe and it turned out perfect.
Thanks for the tips! I will have to use the flower nails next time. I could be over beating the batter. I just recently got a KA Heavy Duty Plus Mixer...I've only used it a handful of times. Big difference from my little hand mixer..lol
sunshine93, I think I overbeat my batter too. I love my KA mixer though!
also, if you use the nails, don't forget to grease them as well.
You really should try using the flower nails & don't open the oven door to check on the cake until the cake has been in the oven up to 30 min. It works!~ Good Luck!!
Don't open the oven door? What? lol..I'm guilty of being a "peeker". Guess I need to stop..
confused-what is the "flower nail trick"?
Coat the flower nails with grease, place in the pan and pour in the batter. The flower nails act as little heating cores. When using a large pan they help the cake cook evenly.
If your cake is larger then a 10" use 2 flower nails. Place them round side down & pour batter all around them using your finger to keep them in the middle of your cake. Opening the door too early into baking will cause a cake to fall & shutting it will cause it to fall. You know... Remember your Grandma saying... "Don't stomp when they are walking in the kitchen because the cake will fall"
I don't let anyone come in my kitchen when I'm baking LOL Learned it from my Granny!
