I've got baking fever today... boy is it bad! If I bake my Thanksgiving cake today will it be dry by Thursday? Is there a way to store a cake that will extend it's life... other than freezing it? I'd like to decorate and everything today. Just call me antsy.
People think I'm crazy, but I use olive oil in my cakes... I swear my cakes are moister than those baked with Canola or Vegetable oils. Wonder if this will help the fact that I'm so itchy to do this cake today?

Strike while the iron is hot--if you feel like doing it today, go for it. If you get it frosted it will keep just fine till Thursday. The frosting keeps the moisture in.
