Ok, so I made a carrot cake for a potluck at work and they devoured it down to the last crumb. It sparked a discussion at the lunch table though. Shouldn't carrot cake be considered healthy? Let's analyze the food groups. Obviously you've got your vegetable with carrots. Fruit was covered by the crushed pineapple in it. Protein from the walnuts and eggs. Dairy from the cream cheese frosting. Whole grain from the whole wheat flour. And last but not least, that little bitty triangle at the top of the food pyramid, fats and oils, was covered by everything else.
So, what do you think? Can we pull it off?
And in which group are we putting the sugar? LOL
The same group as the oil, haha! Funnily enough there was a study released today that sugar is good for the brain and body, there is a feeling of well being generated by consumption of this product. So for many years sugar was getting a bad rap and today this study comes out. Not sure who sponsored it though, haha, could have been ICES!

All negative nutritional values are automatically cancelled out by the healthy content of the carrots and fruits. Also eliminates the need to accompany your slice of Carrot Cake with a Diet Coke!
You know, you could always lessen the sugar, use lower fat cream cheese, and I thinkCarrot Cake would be a nutricious thing to eat.
