Cake Batter Good For How Long??

i read in the cake mix doctor book that cake mix batter can sit in the fridge for awhile and then be baked.

i made my cake and have quite a bit of batter left over.....enough that I could make another cake...but it's late and I don't want to stay up and bake another. can I cover it and put in the fridge and bake it tom afternoon??

anyone try this??

It usually won't rise nearly as well, depending on whether it uses double acting baking powder or not. Baking soda reacts completely when mixed with a liquid, so if it's all soda it will not rise. Double acting baking powder rises some when mixed with liquid, some when heated, so you'll get a little rising but not that much.

Other than that, it should taste OK and will be safe to eat too.

not sure whether it is soda or powder....it was a duncan hines mix. guess I'll just give it a try and see what happens!!! if anything, I'll have some cake for some cake truffles!!

I just checked a box in the pantry and it has both, so it should rise a little. If it was me I'd make some cupcakes to keep in the freezer and thaw as the craving hits.

just wanted to let everyone know that I saved the batter and put it in the fridge overnight. i made the cake this afternoon and it was fine!! it didn't rise as much as it normally would.....but other than that....worked great!!

not sure if I'd go longer than that though.
