Looking for molding chocolate

i need to find a recipe for molding chocolate.. i want to cover cheesecakes with the look of fondant but need to be able to refrigerate the cake to keep the cheesecakes fresh... any ideas???

the one I use is called candy chocolate clay. It taste great and is easy to make and use. I have made flowers and little figures using it. the recipe is 14 oz of chocolate chips or candy melts. 1/3 cup light corn syrup. 1/2 tea lorann oil or candy flavor. Melt chocolate in microwave or double boiler. add syrup and flavoring mix til a soft ball forms. Refridgerate to get a little stiff.

Ghirardelli makes melting chocolate in a 2 1/2 pound box. Both white and milk chocolate which melts very nice. I have not used it to cover a cake but it covers strawberries reallywell. MC

can this be rolled out to cover a cake??? how do you color it since its a dark brown???

yes you can roll it out just dont let it set too long in the fridge. you can make the white chocolate and color it

I have a recipe from cake decorating school for modeling chocolate - but i believe it may harden in the fridge - have you considered a good old fashioned chocolate glaze? You can get a very smooth shiny finish.....

I guess I was thinking along the lines of a chocolate ganache. Hence the Ghirardelli chocolate it works great. MC
