Candy Coloring Question

I have been trying to use wilton gel colors to color white chocolate. With no success at all icon_cry.gif The chocolate keeps seizing up on me. What can i use to color my chocolate? do i need to use the colored candy melts or is there another way? Please help. i am just learning to do this and am not sure of a lot of things. i love to get help from people that know wut they are doing that trying to figure something out and wasting $$$.

I'm pretty sure you have to use candy colors. Do the wiltons have water in them that would make the chocolate seize for sure.

Wilton does make candy colors. If your using the regualr gels try it in very very small amounts and add from there.

Regular gel paste and liquid gel colors are water/glycerine based, and will always cause the chocolate to sieze. In the Wilton section, or the Make'N'Mold section (depends on brand they sell) there should be separate colors for coloring candy. These are oil or fat based and will not cause siezing.

I prefer powdered pure food colors. They are highly concentrated and easy to measure for more precise coloring of second batches.

thanks i will check at my local shops Monday for them. i have another questions though. i purchased a box of like 20 candy molds at a rummage store a while back for $2 (big steal lol) in the box i got a two piece easter bunny holding a easter egg mold. the two halfs go together and like packaging for baked good from the store. the only thing is i dont know how to use this kind o mold. can someone help. i would like to make a hollow bunny like the ones from my childhood.

Depending upon the size, you might be able to use rubber bands to close the mold. There are clips that can be purchased to close larger molds. Tell your vendor that you have a 2-piece, 3-D mold, and the size in length and width, and they will be better able to advise you.

i went to the cake shop the other day before this white blanket of death started and got some of that Americolor??? the owner of the shop said that they work for everthing. thank you everyone

I have heard that Americolors will work for coloring chocolate but ONLY if you use it along with flo-coat which keeps the chocolate from seizing because the Americolors are water based. Flo-coat is sold here on cake central. I have tried the wilton candy colors and I was not impressed at all so I have been meaning to try flo-coat with normal icing colors. Anyone else try this?

I have used Flo-Coat in the past, with great success. If you follow the directions to the letter, you should have no problem.

You can use your regular colors, but add some vegetable oil a little at a time til it's blended.
