How long will cake stay fresh in the fridge? I have two cake that have to be done by Saturday, will it be ok if I fill and frost them tonight, cover them and put them in the fridge? Im afraid they will dry out or pick up the other flavors in the fridge!!! Let me know what you think! Thanks!!

Before you put icing on them wrap them up tight in plastic. Make sure they are wrapped good and tight, keeps the moisture in and "flavors" out. Take them out a couple hours before decorating, this works for me, and lately I've been freezing the layers then taking them out the morning that the cake is to be iced.

I should add, iced and or decorated. If the cake is due Saturday, then I usually decorate it Friday evening.

Hi. I always start my decorating on Thurs. for Sat. cake orders. I frost them and keep them in the refrigerator uncovered and they are fine. If you are nervous...you can always stick a box of baking soda in your refrigerator. Also...you can box it up and cover it with a clean unscented trash bag if it will still fit in your refrigerator. Unless the filling requires refrigeration, they are fine boxed up and for extra precaution, I bag the box to seal in the moisture and they will still be fine for your timeframe.
Your cakes should always be covered in the fridge as the moisture will be affected by exposure to the air.

I never cover my cakes when I put them in the refrigerator and never have problems with them being dry or moisture affected. Anyway...I might try boxing them in the future...my problem is that I do not have enough room to put several cakes and boxes!!! icon_smile.gif

i bake a week in advance, torte and crumb and put them in my freezer.. i dont use the freezer for much more than cakes so i dont have to worry about smells...

i dont have to cover and my cakes are always moist.. sometimes too moist, if thats possible..

Well, most of us don't have a professional commercial fridge or freezer so the fluctuations in humidity control can really vary a lot. You could be getting too much or not enough moisture. That is the only reason for worrying about it, well, other than food odours. Some butter cakes will dry out very quickly in the refrigerator too, so that is something to bear in mind.
