How many cups of batter is in a cake mix used with the cake mix extender recipe on this site? I am making a bunch of 11" x 15" sheet cakes and need to know how many mixes to buy.

Australian cake mixes are 11.5 oz not 18 oz as in USA. The cake mix extender allows me to bring my batter up to approx the volume of a 18 oz US cake mix.

CAKE EXTENDER (for higher & lighter cakes)
1 pkg. cake mix (any flavor)
1 cup flour
¾ cup sugar
1 tsp. baking powder
½ cup oil *
2/3 cup water, milk, coffee, juice, alcohol or any mixture
Prepare cake mix per package directions. Combine remaining ingredients and add to batter. Pour into greased 9" x 13" pan and bake per package directions. adding fifteen extra minutes to baking time.
* I use very soft butter. Itt produces a wonderful cake of a different texture to the oil-based one.

In general, the extender provides about another 6 oz of batter.

i got about an extra 1 cup and a half...so altogether that was about 6 1/2 to 7 cups of batter with the extender

Using the Cake Extender recipe with a doctored cake mix that called for 1 C. milk, 1 stick of butter and 3 eggs... I ended up with a yield of 11-1/4 cups of batter. To say the least, I was impressed.

and most importantly..how did it taste?

That was from pp. 106 of the Cake Doctor, "Mom's Layer Cake". Absolutely delish! I'll certainly be making it again. icon_smile.gif
