Hi everyone,
its seems that i have a large pumpkin left over that didnt get carved and i want to make pumpkin pie. One problem tho. How? icon_biggrin.gif Does anyone know how? and is it ok to use a reg "jack o lantern " pumpkin or do i use a special kind of pumpkin? Thanks in advnace!

I have used a regular old jack o latern for pumpkin pie.... I can not really compare to taste for you... I do not eat it...I have not had any complaints though...

You can certainly use your old jac o' latern pumpkin! Just be sure you get all that stringy stuff out of there!

I've used regular old Jack O'latern pumpkins for pies for the past 2 years and I think they still taste good. I know Martha Stewart would disagree, but that's her opinion.

All you do is just roast your pumpkin until soft, collect the soft fleshy part and use that in any pumpkin recipe. Worked really well for me so far.

..hmm..never thought of roasting it..pretty neat! I just cut mine and boil it.

Don't forget you can roast and salt the seeds. Kids think it is pretty neat!

Hi Everyone,
THanks so much for replying. I do, however, have a few more questions. How do i roast pumpkin? and how do i boil pumpkin? Just cut it up, remove the striny things, and thrown it in a stock pot full of water and boil? THanks!

..that's how I boil it...just clean away the skin, the seeds and stringy stuff, cut into chunks, just like if you were going to boil potatoes. Boil until fork tender!

To roast, cut the pumpkin in half then place them cut side down on a big baking sheet lined with foil. Bake at 425 degrees for about 50-60min. My pumpkins were quite large this year ~ 20lbs, so I cooked mine for about 90mins. But once it's done, it's really soft and you can scoop it out.

I forgot to also say that yes, you do scrape out all the inside scrap before baking.
