Does anyone have any tips on getting fondant to dry when it is humid outside? I did a cake last week, and all of my fondant peices dried except for the ones on the days it was raining. I need to do more fondant work the week and we are going to be getting more rain. Help, I can't afford for them not to dry in time. Thanks, Keli

I was told that using a fan (with cleaned blades) helps, and also I have heard about preheating the oven at a low heat turning it off giving it a few min and then putting the fondant covered cake in it and it dries great...BUT I HAVEN'T TRIED IT, SO I DONT KNOW WHAT TO SUGGEST TO YOU PERSONALLY!

I live in Hawaii and it is very humid here all the time, it seems. I tried making fondant roses. The fondant was very thin and it wouldn't dry and I tried putting the petals in the oven but it didn't help dry them out. I tried almond paste, which is more expensive, but it dried out without any problems.

If it's something you can work with quickly, add a little gum-tex to your fondant (1 tsp per 12 oz fondant) and that will help it dry much faster, stronger too. I've heard you can also set them under a desk lamp, you know, the metal flexible kind that radiates plenty of heat...
