I have to do three cheesecakes today and I'm using the Cake Doctor recipe for New York-Style Cheesecake and it's calling for 2 tablespoons lemon juice.

Do not have lemon juice and wanted to know if I could substitute lemon flavoring instead and if I can, how many spoons for the 6 tablespoons juice should I use?

TIA

Not sure about that, but do you have any lime juice? You could just substitute.....

1/2 tsp of vinegar is the equivalent of 1 tsp of lemon juice. However, I would maybe add a splash of lemon flavoring to make sure you get the right taste.

does that book have a substitute section in the back? Some of my cookbooks have that - you just need to hunt for it.

when we make cheesecakes..we add flavoring to taste.

We add flavor..taste it..till we feel it's "JUST RIGHT".

but lemon is a powerful flavoring so just add it by the teaspoonful till you feel it's "just right"..lol
