Does anyone know how long you can store MMF and it still be good? I want to do a cake to give to a couple from church, but refuse to taste it (on a diet and afraid it will send me into a sugar frenzy!)

Thanks!

Although it can be kept at room temp....I have stored mine in the fridge for several weeks and it was still good.

Wish I could answer that. Don't use it. Too big of a pain to make it.

If you think about it, both marshmellows and confetioners sugar are stored at room temp in your pantry. There really isn't anything in MMF to "spoil" ... I haven't used it long enough to really see at what point it hardens too much but I don't see what could go wrong. Sugar is a preservative.

I had some wrapped in plastic wrap and in a tupperware container for 3 weeks and it was fine when I used it.. still nice and soft and easy to work with and tasted fine..Made some babies with it for a baby shower cake and they turned out ok..

I use MMF a fair amount and the last time I did, I froze it along with some rolled buttercream I made. About 1 month or so later I thawed it out on the counter and kneaded it for about 5 minutes and it was totally fine and tasted great. I double wrapped it in cellophane and then aluminum foil to ensure freshness just like you would do with a cake.
