HEEEEEEEEEEEEEEELP...I need to bake another 2 sets of cakes for my mad hatter halloween cake for the restaurant tonight...

and there are NO EGGS to be had anywhere!

I mean I can just work with the set of 3 I've already baked, but I wanted to showcase my design abilities!..



It's going to suck to have my chocolate mice taller than the cheese I was going to make..lol

I was going to post the pics of legs and topper bu they are too big...snif!

the topper is a votive candle holder in case we lose the power again!

Could you substitute meringue powder?

PastryDiva,

Here is the eggless cake recipe I've used before:

MABEL ROBBINS' EGGLESS DARK CAKE  


2 c. white sugar
4 tbsp. cocoa
2 scant tsp. soda
Pinch of salt
3 c. flour
2 c. sour milk
1/2 c. melted lard
Vanilla to taste
Powdered sugar

To make sour milk. Add 1 tablespoon of white vinegar or lemon juice to 1 cup milk and let stand for 10-15 minutes.

Preheat oven to 350 degrees. Grease and flour 13 x 9 pan. Sift together all dry ingredients. Add melted lard and beat. Flavor with vanilla. Bake until toothpick inserted into center comes out clean. Cool and sprinkle with powdered sugar.

A war department recipe from WWII when they rationed eggs.

that's all I can suggest too is to substitute with merginue powder which is really only egg whites though icon_sad.gif
