Proper Way To Divide Icing?

showing my true newbie colors here.... icon_redface.gif

Is there a proper way to divide bc icing before you begin to color it? I am decorating a standard 8 in round cake. (the rainbow cake in the wilton course 1 to be exact) I have a batch (3 cups) of stiff icing and I need to mix the colors for the rainbow. How do I divide it to make sure there is enough???

According to the Wilton instruction book, you need a 1/4 cup of medium consistency icing in each of the following: royal blue, christmas red, lemon yellow, kelly green and violet! Hope that helps!

in the future is there a sure fire tip to "KNOW" how much to mix/divide for your cakes?

Funny klh, I just had the same dilemma last night. I am decorating the same cake for class. If you find a way to divide your icing, please, let me know. I basically took my 3 cups of icing, and used my 1/4 cup measuring cup and scooped out the amounts I needed, then mixed them in seperate bowls. Hope this helps.

It doesn't need to be so exact. If you make a little extra, believe me, you will use it on another cake eventually! Just put it in the fridge and it will keep a very long time!

When I was in the class I always made more icing then what the book said. We always practiced first & that used up alot of our icing. I made extra so I didn't have to keep re-using the icing I was using to practice with. I never had enough time to do anything when I was in class.

Also I big tip! When you color your icing always use extra icing! You never know when you might run out! It is hard to match that same color if you run out of it!! And then the time comes back into play. Like MrsMissey said, you can use the icing later if you have too much!! My frig stays full of icing! It's great for practicing!

I will usually make a little more then what i need. But i never make my colors until i have the cake frosted, unless my cake is something other then white. I like to make sure that is done first. Dont know why, that is just how i have done it.
