Transporting Stacked Wedding Cakes

Hello-
I am a new cake decorator and it seems that business is really picking up. I am having a lot of requests for cheesecake weddings which is great. I would however forsee in the very near future needing to do a stacked cake and am very intersted in knowing how you would transport to the wedding?

Stacked & On rubber mats?
In seperate boxes and place together at site?

It really depends on your comfort level. When I first started I would only stack a couple of the tiers and transport the rest apart and then assemble at the site. When I went to work at a bakery I had up to six wedding cakes to deliver in one day so there was no time to assemble on site. I once delivered a six tier stacked, that was really scary, but it made it without any trouble. I never use boxes, for me they get in the way and I don't like trying to get the cakes in and out of them. I use the non-skid rubber mats in the trunk and I think that really helps. I dowel my cakes really well, I always put the center dowel through the whole cake. I really like the wilton plastic dowels, they don't tip like the wooden dowels. I drive carefully, slow on take-off and slow gradual stopping. Slow on the corners. I use my hazard lights so others will know there is a reason I'm driving like an idiot. When I get on the freeway I drive normal speed. I've found it's good to put the cake in the trunk and drive carefully but don't look at the cake during transport, it just stresses me out to see it jiggle, besides the danger of turning around to look at it while driving. If something happens there's really nothing you can do until you get there anyway. One more thing, it makes a huge difference in how my cakes travel if I refrigerate them overnight. They are much more stable. Hope this helps you some. icon_biggrin.gif

Yeah!! Like Kate said!!! She knows what she's talking about!! BUT I will never transport a stacked cake. I put each cake in seperate boxes. I use boxes about 4 inches larger then each cake so it's easier to get them in & out of the box. I use heavy duty cardboard boxes, not cake boxes. I use rubber matting under the cake & under the box the cake is in. Doesn't move one bit!! I use wooden dowels BUT I am going to try the plastic dowels. I haven't used them yet. Kate has a lot of great advice!!

boy, i sure am going to invest in dowels and rubber mats! i don't know if i'll be that brave to drive with a stacked cake in my car. icon_eek.gif
