how do you make the buttercream less sweet ?

That has been a topic many, many times ... There are some that say adding salt helps and others say adding salt makes buttercream sweeter tasting ... I don't think there is a way to make it any less sweet to tell you the truth icon_sad.gif

My solution has been to make a different buttercream! Making a meringue buttercream (rather than the crusting kind) gives you an icing which is smooth and buttery, and you can control the sweetness!

Well, not the same kind of buttercream, but the Whimsical Bakehouse Buttercream is less sweet, if you don't mind the texture, but it is a non-crusting buttercream. I will send it to you.

I think that the almond extract cuts down on the sweetness!

Well I just tried making some buttercream, but I basically changed it to my taste. Some of you probably did this too. But what I did was instead of putting 1 cup of shortening to 1lb of sugar, I put 2 cups of shortening to a little over a 1 lb of sugar. I then added 1 package of Dream Whip. Add a dash of salt. Then as you'll see the icing is real dry, slowly pour in heavy cream until you get the consistency you want. You'll notice that the icing will look like it has doubled in size once you add the cream. But honestly, I think I will stick to this one. It is so fluffy and creamy, but it still has that buttercream flavor AND IT IS NO WHERE NEAR AS SWEET AS REGULAR BUTTERCREAM. - Kenya
