I tried this on a pina colada cake awhile back because I couldn\’t find a cream cheese pineapple recipe, so I threw a couple simple ingredients together and voila! No cooking required. I came up with this recipe with the help from jaimee679 and her Pina colada cake 4. I made this for a tropical weddig theme. All flavorings are from Loraan flavorings and oils.

This recipe came from the cookbook my cousin put together after my Grandmother passed away in 2005. The book is a collection of our favorite recipes that Grandmother used to make. It is a wonderful way to keep Grandmother’s memory alive. I hope you enjoy it as much as we do.

Yummy Pineapple Upside-Down Cake

This makes a one layer 9×13x2 cake but I suppose you could use a different pan if you like. Also, it calls for butter to coat the bottom but I still spray the bottom and sides with baker’s joy just in case.
