I’ve been trying to perfect a no added sugar fruit cake for several weeks and found this adapted recipe came out the best for taste. A batch of the 12 cake recipe made me two 4″ round and 2 6″ round cakes, adjusting the cooking time to 2 hours and 3 hours.

This makes a one layer 9×13x2 cake but I suppose you could use a different pan if you like. Also, it calls for butter to coat the bottom but I still spray the bottom and sides with baker’s joy just in case.

This is a recipe I came up with for my family because they love peach! It’s very moist & refreshing, I use a cream cheese whipped Frosting to frost & fill, They go great together. Hope you enjoys this as much as my family did!
