Here’s a vegan WASC-ish recipe. I prefer the vanilla flavor, but feel free to switch it up… :o ) You can find Tofutti cream cheese online or in a health food store. Look for the one marked “non-hydrogenated”. (No one deserves that stuff in their arteries.) :o )

Vegan Brown Sugar cake

Here’s a change from the ubiquitous vegan chocolate cake recipe. I’d like people to know we aren’t “one hit wonders” with cake. :o ) This version is moist and pairs well with chocolate buttercream or brushed with brown sugar syrup. I hope you enjoy.

This is a cake I use all the time, I love the results, it is super moist and extra delicious. For a little more lift, wait to add the vinegar at the very end, stir in quickly and bake immediately.

This recipe is vegan as written, meaning it contains no animal products. It is considered a white cake, but usually does not turn out looking “white.” It can also be altered to nearly any flavor by changing the liquid. It could even be made into a chocolate cake (by adding 1 cup cocoa powder, reducing flour by 1/2 cup, and using chocolate soymilk as the liquid) although I have never tried this. I have used this cake several times for wedding cakes and it its quite stable. It is a moist cake that is easy to work with and decorate. Flax seeds are not absolutely necessary, but using them produces better results and can be ground in a blender or clean coffee grinder.

I learned how to make this cake while living in Okinawa. It has become a family favorite although this is not the prettiest cake in the world, it is most likely the crumbless and it really is “sponge” cake. Cube it up for a great snack for kids on the go with no mess (don’t frost or glaze it) or for a chocolate fondue. Add some red dye and this fakes as a “brain” for halloween!
