I first tested this recipe when I was making a birthday for a coworker’s son. I was pleasantly surprised by the intensity of the peanut butter flavour and I couldn’t stop eating it. Hope you enjoy!!

My mom used to make an absolutely fabulous Chocolate Zucchini Cake growing up. This is the closest I’ve come so far in making one similar. Even my sisters who are on diets couldn’t stay away from this one. Hope you like it too!
The cream cheese in this recipe does wonders for moistness, without changing the flavor too much.

Dont be tempted to substitute instant coffee – the cake will take much better if you include a cup of real espresso. This cake is fantastic layered with coffee buttercream and covered in glossy dark chocolate ganache – a MUST for coffee lovers!!!
This cake will keep for upto 4 days once covered and decorated. Can be frozen and will need to defrost overnight.

I had a few members who asked if I would post this recipe. It is my number 1 request. This is my version, the original calls for pineapple, raisins and margarine, I don’t use any of these. It may look like a lot but it is really easy if you prep your sweet potatos and chop your nuts ahead. Sweet potatos can be prepared, portioned and placed in zip-loc freezer bags. Just thaw when needed.

I have been wanting to try some cake balls for awhile and decided to use some leftover cake to make these. I used a peanut butter frosting recipe and thinned it down for the filling. It’s reeeaaaaalllly Good!
