these delicious cake bars are easy to make and a great treat for lunch boxes or just whenever you fancy a treat yourself.
Cherry and raisin cake bars
Ingredients
- 120g/4oz marg or butter
125g/4oz soft light brown sugar
2 eggs beaten
120g/4oz self raising flour
120g/4oz glace cherries chopped roughly
75g/3oz raisins
50g/2oz ground almonds
Instructions
preheat the oven to 175c/350f
- grease and baseline an 8″x8″ tin
- cream the butter and sugar together
- gradually add in the egg, beating well after each addition
- sift in the flour, add the remainding ingredients and gently fold in
- pour the mixture into the tin and bake for 25-35 minutes
- once cooked turn out onto a wire rack and when completely cooled cut into bars
