Easy Red Velvet

I had tried several Red Velvet cakes…scratch and cake mix and this is one that I have settled on that has the best results and the most rave reviews. It is a deep red color and delicious with cream cheese icing, or Kahlua added in lieu of half or all of the water for a twist. You can add a teaspoon of cinnamon for another delicious version. I used the WASC Rebecca Sutterby version as my base and tweaked from there.

Easy Red Velvet

Ingredients

  • 2 boxes French Vanilla cake mix (white cake mix will work well too)
  • 2 cups flour (290g)
  • 2 cups granulated sugar (444g)
  • 1-1/2 tsp salt (12g)
  • 1 cup Ghiradelli Sweet Ground Chocolate (1 cup chocolate cake mix will work too)
  • 2-2/3 cup water
  • 1/4 cup vegetable oil
  • 2 tsp vanilla
  • 2 cups (16 oz) sour cream
  • 6 eggs
  • 1 jar (1 oz) Wilton No Taste Red

Instructions

  1. Place all dry ingredients together and blend. Add remaining ingredients and mix on medium about 2 minutes. Bake at 325 until done.

I was wondering if I can use buttermilk instead of the water? or will that be too much on the sour part sence it has sour cream I'm just thinking because by scratch it calls for it thanks

Sorry, I think the buttermilk would be fine... but Ive never tried it. PepsiBaby.... Bake the cake until top bounces back or crumbs stick to a toothpick when inserted... I eyeball mine depending on the size of cake for the time.

Great recipe, thank you. I use the WASC variations for nearly all of my cakes, and was hoping to alter it for a red velvet too. I didn't make any alterations and it turned out great! This is actually the 2nd recipe of red velvet I made tonight. The 1st was from Food Network, Paula Dean's recipe. It was good, not great. Maybe it was my fault, not sure. But I wasn't too thrilled with it so decided to give the trusty WASC variation a try. My husband said this one is much better!

FYI...Yoplait now has Red Velvet Cake yogurt. I'm going to sub that for the sour cream, I'll keep you posted.

Do you have to use sweet ground chocolate or chocolate cake mix? I would hate to waste a whole box of chocolate cake mix, and NONE of the local walmarts carry ghiradelli brand chocolate powders (only thing I can find are the chocolate chips...) The smaller local grocery stores do not carry it either :( It is my fav chocolate, can I use herseys semi-sweet cocoa powder or unsweetened?

I would think you could use Hersheys sweetened cocoa. Same thing different brand. I can't wait to try this one out!!! I have a wedding coming up in Feb. and I want to taste test ;)

This was my first time making red velvet cake. I made this with the 1 cup of chocolate cake mix and it turned our pretty good. The colour seemed a little light (more pink) but tasted good. In case anyone wonders I found this recipe to make about 6 - 6 1/2 dozen standard size cupcakes.

Great recipe, but too much batter for my KitchenAid mixer (5 quart). I had to pull out my hand mixer. I'll half the recipe next time, so I can use my KitchenAid. ;)
