I found this recipe in a Cross Stitch magazine…of all places! I made a 1/2 batch to see how they would work and taste (it’s a large recipe). I like the peanut butter taste, the texture, and the ease with which I ws able to work with the dough. While very soft, the dough was not sticky.
Peanut Butter Roll-out Cookies
Ingredients
- 1 cup butter or margarine, softened
1/2 cup vegetable oil
2 cups sugar
1 cup smooth peanut butter
2 eggs
1 tsp. vanilla extract
4 cups all-purpost flour
1/2 cup finely crushed corn flake cereal
1/4 tsp. salt
Instructions
Preheat oven to 350 degrees. In a large bowl, cream together the butter, eggs, oil and sugar until fluffy. In a medium bowl, combine the flour, cereal and salt. Add the dry ingredients to the creamed mixture, mixing until a soft dough forms. On a lightly floured surface, roll the dough to 1/4″ thickness. Cut into shapes and transfer to a cookie sheet covered in parchment paper. (Or you can lightly grease the cookie sheet). Bake 10-12 minutes.
