Brownie bottom Cheesecake

Brownie bottom Cheesecake

Ingredients

  • 4 squares unsweetened baking chocolate
  • 1 stick butter
  • 2-1/4 cups sugar, divided
  • 5 eggs, divided
  • 1/4 cup milk
  • 2tsp. vainilla, divided
  • 1cup flour
  • 1/2 tsp. salt
  • 3 pkg. (8 onz.) cream cheese softened
  • 1/2 cup Sour Cream

Instructions

  1. Preheat oven 325 F . Microwave chocolate and butter in large bowl on high 2 mints. Stir until chocolate is completely melted. Add 1-1/2 cups of sugar, mix well.
  2. Add 2 eggs, mixing on low speed after each addition,add milk and 1 tsp. vanilla, mix well. Combine flour and salt. Gradually add the chocolate mixture and mix until blended. Spread evenly into grease and floured 9 inch springform pan. Bake 20-25 minutes.
  3. Beat the cream cheese, remaining 3/4 cup sugar and remaining 1 tsp. vanilla until blended. Add sour cream, mix well. Add remaining 3 eggs, one at a time, mixing in low speed until blended. Pour over brownie layer pan ( filling will come almost to the top of pan) Bake 55 mints. to 1 hour or until center is almost set. Run a knife around rim of pan to loosen a cake, cool before removing rim of pan. Refrigerate 4 hours or overnight (better). Let stand at room temperature 30 min. before serving. Enjoy!!

I accidentally grabbed the wrong type of chocolate so I ended up using bittersweet instead of unsweetened. I still used 4 squares but reduced the sugar in the crust to 1 cup and increased the vanilla to 1/2 Tablespoon. I also increased the vanilla in the cheesecake to 1/2 Tablespoon.

It turned out WONDERFUL. Everybody loved it!

The only thing I would probably do different next time is reducing the ingredients for the crust by half because it turned out really thick.

Hi Melamel!! Thanks for your comment. Im happy that everybody loves the recipe, but remember, is not a crust, it is a brownie bottom cheesecake so its suppose to be thick.... Happy baking!! Take care... ;o)

Going to try this in just a minute for my son's 13th birthday! He requested this! My first time making cheesecake (besides the muffin ones)
