I got this from a South African mayonnaise recipe booklet. It’s delicious. Everyone begs for seconds.

Chocolate Mayonnaise Cake

Ingredients

  • 500 ml cake flour
    125 ml cocoa powder
    15 ml baking powder
    5 ml bicarbonate of soda
    3 extra large eggs
    375 ml sugar
    5 ml vanilla essence
    250 ml mayonnaise
    250 ml water

    ICING
    125 g butter or margarine
    80 ml cocoa powder
    375 ml icing sugar
    5 ml vanilla esssencce
    15 ml milk

Instructions

    1) Sift the dry ingredients together and set aside.

  1. 2) Beat the eggs, sugar and essence together until light and creamy. Add mayonnaise and water gradually, alternatively with the dry ingredients. Mix well and spoon into two greased 20cm cake tins.
  2. 3) Bake in a preheated oven at 180 degrees celcius for about 35 minutes. Leave to cool in pans before turning out onto cooling racks.
  3. 4) ICING: Cream the butter. Sift icing sugar and add to butter, beating well. Add essence and milk and mix well.
