Very delicious and moist made from a cake mix.

Carrot Cake with Raisins

Ingredients

  • 1 pkg white cake mix or carrot cake mix
    1 pkg vanilla instant pudding
    4 eggs
    2 cups grated pelled carrots
    1/3 cup vegetable oil
    1/4 cup water
    3/4 cup raisins
    if you are using carrot cake mix omit
    2 tsp cinnamon
    1/2 ground nutmeg

Instructions

    In a large mixing bowl combine cake mix, pudding mix, eggs,

  1. carrots, oil, water, raisins, cinnamon, nutmeg. Beat on low speed for 1 min to blend, then on med for 2 mins. Spread batter into prepared pan. Bake 40-45 min. or until tester inserted in center comes out clean. Cool completly in pan on a wire rack. Frost as desired. Remember to add spices only if you use a white cake mix.
