Chocolate Buttercream Dream

I used my buttercream dream icing recipe to create a chocolate buttercream icing. I didn’t like chocolate buttercream with cocoa added b/c of the grainy taste/texture. So I used chocolate candy melts and it tastes so much better than using cocoa.

Chocolate Buttercream Dream

Ingredients

  • 1 stick butter (unsalted)
  • 1 stick butter (salted)
  • 1 cup shortening
  • 2lb bag of confectioner’s sugar
  • 3 teaspoons of clear vanilla extract
  • 5-6 tablespoons of milk (cold)
  • 1lb bag of milk chocolate candy melts
  • Chocolate lorann oil

Instructions

Cream butter and shortening. Add clear vanilla extract then add confectioner’s sugar. Allow confectioner’s sugar to blend well then add milk. For thinner consistency, add more than 6 tablespoons of milk.

  1. After icing recipe is well blended, slowly add melted chocolate to the buttercream icing while your mixer is running. Then I usually add two caps of the chocolate lorann oil.
  2. If mixture doesn’t look brown enough or look like chocolate, add 1-2 drops of color paste. I used Americolor chocolate color paste.

can this recipe be made with white chocolate. I love the buttercream Dream recipe but I want a chocolate flavored icing without the chocolate color. Would I have to used the flavor oil?

Looks yummy... but I'm in the UK, our version of shortening is trex which has a hard almost crumbly consistency, would trex work? Or do I need to use something like Crisco? Also candy melts can be expensive, would either bars of chocolate chopped into small bits or maybe choc chips work? And what's chocolate lorann oil?

@lou2224 ‍ , it's going to be Crisco--shortening here is always smooth. :) Not sure about the melts, as I have only ever used cocoa, but Lorann oil is a brand of flavored oils. I believe they can be ordered on Amazon, but not sure about in the UK.

thank you for this - looks wonderful. I'm just interested. Why CLEAR vanilla since it's chocolate and one would like to use the real thing with beans, and why LorAnn (I use it for other flavours). Does this icing not have enough taste of chocolate? Just asking out of sheer interest. Have never used candy melts. Thanks again
