Oreo Cupcakes

I found this recipe on the internet and tweeked it to my liking. These cupcakes are amazing and everyone who has tried them just raved about them. Warning, have a tall cold glass of milk on hand for the best experience!

Ingredients

  • 30 Double Stuff Oreos with one side twisted off and reserved for the frosting.
  • 2 cups of sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY’S cocoa
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions

  1. 1. Heat the oven to 350 degrees. Line muffin pans with paper liners and place 1 Oreo (cream side up) into each liner.
    2. Stir together flour, cocoa, baking powder, baking soda, and salt in a medium bowl.
    3. In a large bowl, combine sugar, eggs, milk, oil, and vanilla. Stir until well blended.
    4. Add flour mixture to large bowl and beat on medium speed for 2 minutes.
    5. Very slowly stir in boiling water so as not to scramble the eggs. Take your time here! The batter will be very thin.
    6. Fill muffin cups about 3/4 full with batter (about 1/4 cup).
    7. Bake 22 to 25 minutes. Cool completely then frost with the Oreo buttercream.

i dont fully understand. Do you put an oreo on the top also or scrape off the cream and use this for the frosting? Sorry to sound silly!!

I dont think we can get that here in England, but i just found the recipe for the oreo buttercream so I think i'v figured it out now.

I made these yesterday and got 12 easily from half of the mix. They were very nice and very chocoloty!! Had to change things slightly because here in UK couldnt get the same things easily. Couldnt get double stuff oreos just regular and just regular cocoa and used melted butter in place of the veg oil, but they were fine. I made buttercream with crushed up oreos for the topping. Looked a little grey but tasted good. Think next time I might add a bit of food colour to make them look more appetizing.

@Norasmom - next time try putting a small amount of batter in the cupcake liner first then drop the Oreo on top of that and finish filling your cupcake liner. I like it better this way because the Oreo is more in the middle when you bite into the cupcake. @mo63 - you use the uncreamed part of the cookie to crunch up into the Oreo buttercream recipe. @jazycakes - I think it made about 24 cupcakes. I made these for a staff function and everyone raved about them, said they were the best cupcakes they ever tasted. I ran out of Oreo cookies for the last 6 cupcakes so i used homemade chocolate chip cookies and they were also amazing.

Great cupcakes (and who doesn't like Oreos??!). The recipe made 3 dozen cupcakes for me. I made one pan where I put the Oreos in the cupcake liner first, then I made another pan where I put a little batter in first, then the Oreo, then more batter. Both ways came out fine (I never had the Oreo stick to the liner). I may like method 2 a little better simply because the Oreo rose to the middle of the cupcake, putting a little bit of Oreo in each bite! Will definitely make again!

@m063: A hint on the icing would be to barely mix in the oreos. The icing will definitely turn grey if you mix it in too well. I also used only about half of the leftover Oreos.

i made these for my daughters ice skating class, everyone loved them, had a few say 'this may be one of the best cupcakes i've ever had'....want to do them with peanut butter cookies next time...
