Strawberry Jello Cupcakes/ Cake

I make this all the time, its so easy and everyone loves it. This recipe is different because you dont pour the jello mix over the cake, you just mix in the powder. This Cream Cheese Icing is fool proof I am the worst Icing maker but i purposefully make cakes that use this icing because its delicious and so easy to make.

Tips:
If you’d like to you can add about a cup of drained diced strawberries to the mix (I dont because I dont like fruit in my cakes).

Leave the cream cheese and butter out while you make the cake, it’s a lot easier to mix.

Use an electric Mixer with the icing!

Ingredients

  • Cake:
  • 1 pkg. White cake mix
  • 1 pkg. Strawberry Jello mix (or whatever flavor you prefer)
  • 1/2 cup. Salad oil (cooking oil)
  • 1/2 cup. Water
  • 3 eggs
  • Icing:

  • 8 oz. Cream Cheese
  • 1/2 cup. Butter
  • 1 lb. Powdered Sugar
  • 1 tsp. Vanilla

Instructions

  1. Cake:
    Preheat oven to 350°
    Mix cake mix, Jello mix, Oil, and Butter. Blend eggs in one at a time. Mix in berries if your using them. Bake in two layers at 350° for 25 min. If making into cupcakes do the same except cook for approximately 18 minutes, until golden brown.

Icing:
Combine Cream cheese and softened butter in mixer untill creamy. Gradually add Powdered Sugar while continuing to mix. Add Vanilla beating untill Consistent.

same recipe i use, i just reduce water by 1/2 cup and add one 15oz package of frozen sweetened or unsweetened strawberries, pureed. I also whip egg whites first. and fold in at the last.

I make cupcakes, but I use yellow cake mix, add 1 extra egg and 1/2 of a 10 oz pkg. frozen strawberries. I put the remainder of the strawberries in the frosting; however, you must increase the powdered sugar until the desired consistency is achieved. When the cupcakes cool I fill them with key lime pudding, 1 can sweetened condensed milk and 1/3 to 1/2 cup key lime juice. Top them with a fondant strawberry and people rave about them!
