Jello MMF

This came about by pure experimenting and me forgetting to buy strawberry extract. I thought, hmm..why not try strawberry jello. It flavored it, even gave it color and most surprisingly, it kept it very pliable and gave it a great texture. Now I am hooked on adding jello to every batch of MMF. Ingredients

  • 1 bag of mini marshmallows 10.5 oz.
  • 3 tbs of water
  • 3 cups of pwd sugar
  • 1/2 pack of jello (any flavor)
  • 1-2 cups of pwd sugar for kneading purposes.

Instructions

  1. step 1. Grease large glass bowl, wooden spoon or rubber spatula. If using a KA to mix the fondant go ahead and grease bowl and dough hook.
    step 2. add marshmallows and water to greased glass bowl, put in to microwave for 1 minute. Stir mixture then return bowl to microwave for an additional 30 seconds.
    step 3. Stir marshmallow mixture, making sure all lumps are gone, add this time pour in your powder jello. stir until blended. mixture will be slightly grainy at this time.
    step 4. If using KA- pour and scrape mixture into greased KA bowl, add powder sugar, mix. add more pwd sugar until mixture is tacky.
    step 5. Sprinke pwd sugar on a flat surface or silpat, turn out marshmallow fondant onto surface add more pwd sugar and knead, and add sugar until it resembles a dough that is not tacky, but firm to the touch. It should be very pliable, it will droop when you hold it up. Do not make this fondant stiff.
    Step 6. The Jello-MMF ball will be very warm, immediately wrap in saran wrap. and let it rest overnight. I have determined that THIS STEP REMOVES ALL GRAININESS. The heat and moisture at this stage allows the sugar in the jello to melt completely.
    Step 7. The following day. The jello-mmf will be very hard. While still wrapped, place the fondant in the microwave, heat for 15-30 seconds, flip over fondant and heat another 15-30 seconds. remove saran wrap, knead once or twice and it is ready to cover you cakes.

Notes of Interest:
It takes about 5 mins to make this fondant.
You can use whatever flavor jello you want.
The Jello DOES color your fondant. That is why I have a link to the colorless/flavorless jello. so you can color or flavor as you wish.
Here is a link to a cake that I made using this recipe. The flavor was strawberry jello, and the jello itself gave me the pink shade. I did not add any other coloring to the fondant.
I hope you all have as much fun as I have had using this recipe. You wont believe how pliable and smooth this fondant is. It was the first time I have done a fondant cake that there were NO tiny cracks, or what I call strechmarks, at all in the fondant.

Hi, Im not sure if everywhere else has it aswell, but in Australia, "aeroplane jelly" does a pack called "creat a jelly" Its unflavoured uncoloured powdered jelly or "jello" mix that can be used. Its under $2.00 a box and should make white MMF:)

Sounds Great! I may give this a try, as I have been asked to make a wedding cake using purple fondant! Hopefully, grape Jell-O will be a tasty surprise, not to mention give me the right shade. I'll try to keep you updated!

How about using the Pina Colada flavor, that probably wouldn't have too much color, but I wonder what the taste would be? Gonna have to try!

You use 1/2 box of 85g. Also. no you cannot add jello to MMF after its been in the fridge. You have to add the powdered jello to the HOT marshmallow mixture. Oh let me know how the pina colada comes out!!

I have tried this method with several flavors in a standard fondant recipe rather than MMF(utilizing the flavored jello in a slightly higher proportion for the unflavored gelatin) , and it also worked very well. Tasted like Starburst. YUM. I used it on a child's b-day cake and it was a hit. Something interesting and different.

ac7- I covered a 12 inch and 6 inch, and still had half a batch left. glutenfree- It was standard jello, but sugarfree should work as well. I cant think of why it wouldnt, guess I'll have to make a batch and see.

This is only a curriosity, but I wonder what the jell-o pudding mixes would do to it. Has anyone tried that? I was just thinking that butterscotch sounded wonderful.

Ok, I tried this yesterday with jell-o devil's food instant pudding and it worked. It just took it longer and a bit more powedered sugar to get it to consistancy.

I'm thinking about doing a lime cake with your jello recipe! Can I add more green coloring to the fondant to make it greener than the pastel green that will come from just using the lime jello? Also, when you say to let it sit overnight in the plastic wrap, is that to be in the fridge? Thanks!

Ok, so I used grape jello for the colour...and just a bit, because I didn't want to get an overpowering flavour. The colour was really light, so I added about a tsp of Wilton Violet gel colour. The colour came out great! The consistency was good too...the only thing I can say is...flavour. There, it was lacking. I wouldn't suggest using grape jello, as it really gave a sugary sweet flavour, and wasn't appealing to my guests. I love cake and sweets, and still, I had to peel off the fondant, and just ate the buttercream underneath. For those who like fondant, this will be a winner of a recipe, unfortunately, just not for me. I'll use it to decorate with , I just won't eat it...

I used this recipe when making a pregnant belly cake, which was huge, and still had lots left. I loved the taste! I needed a baby blue color, so I used blueberry flavored jello - the result was terrific! I will definitely continue to use this recipe!!

just made this recipe how long can i store it for before i use it wondering if it like regular fondant i used clear jello and colored it light brown for skint tone i need

This was awesome!! I just made the fondant and it had a much better taste to it then normal fondant. It was my first time actually making any type of home made. I have always bought the box...not anymore this is much easier and cheaper...Thanks!

Hey jenneyrod,

I believe that KA stands for Kitchen-Aid, referring to a stand mixer.  if you have one it really cuts down on the elbow grease.

Tried this with blue jello and the jello didnt dissolve stayed grainy and it was super sweet. Kids wouldnt eat it! But they dont like storebought fondant either.

Reading through the comments, I must be the only one that had trouble with this fondant.  It could be that I live in Hawaii and our humidity affected it but it was a sticky mess.  I saved some of it by adding a few more cups of sugar but the consistency is still sticky/tacky and impossible to roll.  It tasted really good though and looked pretty.

okay.. questions answered....

1. ka = kitchenaid mixer, mmf = marshmallow fondant

2. if the mixture stayed sticky... it will require a little twiking to adjust that, maybe increase both marshmallow and sugar, or try reducing hiw much jello mix you put in.  i live in ky and we get humidity here too, not as bad as yours, but it stays in the 80-90% alot in the summer. hope this helps. 

3. about the blueberry mixture. i havent tried it, but was it sugar free?  i still have not tried it with sugar free yet. 

4. you can always add more color, longest i have stored in fridge is a week. 

5.  to see pics of cakes i think all you have to do is click on persons name and gallery, used to be that way. 

6. letting this fondant sit over night produces the best silkiest fondant imhave ever used. i hope it works out for all of you as well. 

7. PLEASE NOTE: after you have mixed and kneaded the fondant, taste it!! if it is TOO sweet, add a pinch of salt and knead it well. keep doing this until yiu reach your desired sweetness.
