Totally Yummy Pineapple Filling

I practiced my wedding cake today and I really wanted pineapple & cream cheese as the filling between layers. I was going to try goldenegg’s recipe “simple pineapple filling”. I was worried that it would be too soupy, I noticed some of the comments had said just that. Then I saw a post from debster about how she used SF pudding mix instead of powdered sugar, so I thought I should get a couple boxes of that for back up, in case it wouldn’t get thick with just the sugar. After talking it through with my friend and checking out the side of the pudding mix box, we came up with a pretty tasty filling that is thick enough for cake layers!

Ingredients

  • - 20oz can of crushed pineapple with it’s juice
  • - 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
  • - 1 1/2 C softened cream cheese
  • - 1/2 C powdered sugar

Instructions

  1. Combine the whole can of pineapple and the pudding mix on low speed in mixer for about a minute or two.
    Add cream cheese, turn up speed to fast, do this for another two minutes.
    Add powdered sugar, mix for another two minutes.
    Taste it! It’s delicious!

Thanks for the recipe....yes, it is VERY tasty! However, it was a little runny and not sturdy enough to stand up to the heaviness of my carrot cake. I think that next time, I would drain out the pineapple juice before mixing with the pudding, cheese and sugar, then add in some of the juice a little at a time until I got the exact consistency that I needed.

But the filling is very tasty, and I will definitely use it again!!

I just made this filling for a cake I am making tomorrow. I am hoping it sets up a little in the fridge overnight because it does seem a little thin and I don't want it making the cake soggy. Do you know how long this filling can be left out of the fridge?

I have made this recipe twice now, both times only using one 8 oz. block of cream cheese. It tastes wonderful and have had it requested for another cake. I didn't have any issues with it being too runny and turned out very thick.

I made this filling as printed and it WAS totally yummy. I was making a banana split cake, so I also made it substituting pureed fresh strawberries for the pineapple, and that was also totally yummy. Thanks!

I just made this for a client that wanted pineapple filling. At first I was gonna use the filling that you make with cornstarch but i really didn't like it so i went searching for something else. So i thought I would give this one a shot. It came out SO good. I let my husband try a little bit and he wanted me to make some more so he could have some. I am totally thrilled about this one and will be using this recipe again in the future! Thanks again!!

I don't care for pineapple, but my best friend wanted pineapple filling. I tasted it of course while making it, and even though I don't like pineapple it was very good! (And very sweet!!) I also had issues with it being much too thin, Next time I will drain the juice from the pineapple- but will def use again! Thanks for the recipe!!

Made a Piña Colada Cake (Coconut Cake w/Pineapple Filling & Coconut Whipped Cream Frosting) for my aunt. She totally loved it. I will use it again. I drained the juice from the pineapple and added the juice to the cake mix. The filling was not runny at all.

The taste is really good, but way to watery. Sorry to say, this did not turn out well. And I followed the recipe to a "T"! What happened? No juice next time I guess.

This tasted great but too runny - I drained about 1/2 the juice from the pineapple and still too soft. I'm hoping it sets in the fridge and if not I might mix with some stiff whipping cream. But, great taste, next time I will fully drain the pineapple and add the liquid back in if needed for consistency.

I made this for a cake and the taste is great. I stored it in the refrigerator for use the next day and when I took it out it was separated and runny. Any suggestions or explanations as to what happened?
