Tesso's blueberry dream cake
By: tessoPosted by tesso
Alright, I finally got some of my recipes together and fianlly got the blueberry dream cake ready to submit. It is absolutely devine and has taken me much experimenting to find the right brand of blueberries to use. Have fun making it. I have tried making it from scratch and could never get the cake done all the way through. So I use a DH box mix for this recipe. Feel free to experiment with your own homemade cake recipes. If it works, let me know, and hopefully you might share the recipe with me.Ingredients
- 1 box of DH white cake mix 3 egg whites 1 1/3 cup water 2 tbs. of oil 1 can of COMSTOCK brand blueberry filling/topper
DIRECTIONSThis recipe makes a 9X13" cake or two standad 8" rounds. Make DH cake mix as directed on box. Pour batter into greased and floured pans. Adding the blueberries: Open can of Comstock blueberries, DO NOT DRAIN. Using a straining spoon, lay all the blueberries and filling on top of the batter. gently fold or cut the blueberries into the batter, until you can see them under the surface of the batter. DO NOT stir the blueberries into the mix or they will all end up at the bottom of the cake. Leave them near the top, the berries will settle thorughout the cake as it bakes. Oven Temp: Preheat oven to 300 bake for 90 minutes. Temp and time are crucial for this cake. If the cake is not baked slowly it will burn around the edges and remain a solid line of goo in the center. Make sure to do a test cake for time and any variation in your oven temp. Note: I have tried other filligs and COMSTOCK is the only brand that I found that worked that did not leave a center line of goo throught the cake. Other brands had too much gel filling. As for icing a soft Vanilla bc is a perfect complimet for this cake because it is so rich. Happy Baking!! tesso - Mini cheesecakes
