Peanut Butter Roll-out Cookies

I found this recipe in a Cross Stitch magazine…of all places! I made a 1/2 batch to see how they would work and taste (it’s a large recipe). I like the peanut butter taste, the texture, and the ease with which I ws able to work with the dough. While very soft, the dough was not sticky.

Peanut Butter Roll-out Cookies

Ingredients

  • 1 cup butter or margarine, softened
  • 1/2 cup vegetable oil
  • 2 cups sugar
  • 1 cup smooth peanut butter
  • 2 eggs
  • 1 tsp. vanilla extract
  • 4 cups all-purpost flour
  • 1/2 cup finely crushed corn flake cereal
  • 1/4 tsp. salt

Instructions

  1. Preheat oven to 350 degrees. In a large bowl, cream together the butter, eggs, oil and sugar until fluffy. In a medium bowl, combine the flour, cereal and salt. Add the dry ingredients to the creamed mixture, mixing until a soft dough forms. On a lightly floured surface, roll the dough to 1/4″ thickness. Cut into shapes and transfer to a cookie sheet covered in parchment paper. (Or you can lightly grease the cookie sheet). Bake 10-12 minutes.

I tried this recipe this weekend and thought it was pretty good. Though the dough was a tad crumbly to work with, the results were well worth the effort. It's nice to have the 3rd base to use along with the NFSC and the brownie roll out recipe. Thanks for another good recipe, Gemini
