Lydia's one-egg cake and chocolate frosting

this is a basic, one- bowl cake dressed up with a special frosting! If you like Little House On The prairie, then you will like this cake and icing, makes a great Christmas dessert. easy to make.Ingredients
- CAKE 1 cup granulated sugar 1/3 cup butter 1 egg 2 cups cake flour 2 1/2 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon vanilla 2/3 cup milk Frosting 3 square unsweetened chocolate 2 tablespoons butter 2 1/2 tablespoon cornstarch 1/3 cup milk 1 1/2 cups confectioners sugar 2 egg yolk pinch of salt 1 teaspoon vanilla small amount of heavy cream if needed
Instructions
Cake 1. preheat oven to 375. grease and flour two 8 inch cake pans. 2. cream sugar and butter. beat in egg 3. sift together flour, baking powder, and salt. Mix vanilla in to milk. 4. Add flour and mixtures to sugar mixture alternately tree times, beating after each addition. 5. pour batter in to pans and bake for 20 minutes or until firm in center. cool of 2 minutes at least. If you want to skip the frosting, bake the cake in a tube pan and sprinkle the batter generously with cinnamon, nutmeg, and ginger, and sugar. FROSTING 1. In top of double boiler, over simmering water, melt chocolate with butter. 2. blend cornstarch with milk until smooth and stir into chocolate, siring constantly until smooth and thickened. 3. mix 1 cup sugar, egg yolks, and salt. add to chocolate mixture; cook, stirring, until smooth. add vanilla; remove from heat and allow to cool. 4. beat in remaining sugar, adding a little heavy cream if to make frosting easier to spread. - Creole Christmas Cake
