After trying out a few cake mix extenders I came up with my own variation. Using a regular box of Pillsbury Super Moist Classic White Cake this extender makes about 40 cupcakes. The cupcakes are extremely moist and fluffy too!
Ingredients
-
1 Cup of Flour
1/2 Cup Vanilla Coffee Creamer
1 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract
2/3 Cup Water
1/2 Cup Shortening
Instructions
Combine all ingredients from both Cake Mix & Extender. Mix well until smooth.
